It can be a nuisance to manage your menus for WordPress pages when you need to include or exclude certain pages. It can be done by editing the wp_list_pages() tag, but that means going into the template code.
For the day to day user of WordPress, there’s a handy plugin that allows you to do this and a lot more on a page by page basis. It’s called Page Lists Plus by Tim Holt. Tim’s got a whole range of global options you can apply to any page list:

Plus a number of options you can control at the individual page level. To keep the plugin from being really bloated on each Add/Edit Page screen, Tim’s made it so that you can choose which options display. So for example, I set mine to just offer the ability to include/exclude the page and to enter alternative link text for that particular page:
